Pita Bread Pizza.
Ingredients:
1 pita bread, whole wheat
1/4 cup classico carmelized onion and roasted garlic
1/4 cup green pepper, chopped
1/4 cup onion, chopped
3 large mushrooms
1/4 cup mozzarella cheese, shredded
1/4 cup zucchini, diced
2 ounces chicken breast, cooked and diced
Directions:
1. Pre-heat the oven to 375 degrees. In a small pan sprayed with cooking spray saute the peppers, mushrooms and zucchini for 1 to 2 minutes. Place the pita on a pizza pan, bottom side up. Spread the tomato sauce over the pita. Sprinkle shredded cheese evenly over the sauce. Add the sauteed vegetables and top with the cooked chicken. Place in the middle of the oven for 15 to 20 minutes or until the pita is golden brown on the bottom. Lift with a spatula to check.
