Pita Stuffed With Eggs

Something a little different for breakfast or a light lunch.
Ingredients:
2 tablespoons butter or 2 tablespoons margarine
4 eggs, beaten
1 medium tomato, chopped
2 scallions, finely chopped
1/2 cup feta cheese, crumbled
1/2 teaspoon dried oregano
salt & freshly ground black pepper
4 pita breads
Directions:
1. Melt the butter in a large skillet over moderate heat.
2. Combine the eggs, tomato, scallions, feta, oregano, salt, and pepper and pour into the skillet.
3. Cook as you would scrambled eggs, until set.
4. Cut pockets in the pita breads with a serrated knife.
5. Fill the breads with the egg mixture. If the pitas are large, you might want to cut them in half before filling.
