Delicious pizza in minutes, using store bought pita bread! I've used a drizzle of fruity extra virgin olive oil, fresh cherry tomatoes with olives, mushrooms, garlic and feta cheese seasoned with fresh basil, oregano, and Italian parsley. You could easily sub Italian tomato sauce, sauteed red bell pepper, onions, mushrooms, and steamed broccoli florets topped with shredded mozzarella, or any combination you fancy. Be creative and enjoy!
Ingredients:
1 whole wheat pita bread
1 1/2 tablespoons fruity extra virgin olive oil
3 cherry tomatoes, sliced
2 button mushrooms, sliced
2 black olives, sliced
1/2 of a small garlic clove, minced
1 -2 tablespoon crumbled feta cheese or 1 -2 tablespoon shredded mozzarella cheese
1 teaspoon fresh basil, chopped
1 teaspoon fresh oregano, chopped
2 tablespoons fresh italian parsley, chopped
Directions:
1. Preheat oven to 400 degrees F.
2. Place pita bread on a baking pan or pizza stone.
3. Drizzle with olive oil.
4. Top with toppings in order given.
5. Bake for 5-10 minutes depending on crispness desired.
6. Enjoy!
