Piri Piri Pork Stir-Fry

Piri piri pork stir-fry
Ingredients:
2 potatoes
3 tablespoons oil
500 g pork
2 carrots
4 spring onions
135 g baby sweetcorn
155 g snow peas
6 tablespoons piri-piri
Directions:
1. Preheat the oven to 220C/200C Fan/Gas 7. Add the potatoes to a pan of boiling water, cover and simmer for 5 minutes. Drain. Put in a roasting tin with 1 tbsp oil and toss. Roast for 25 minutes.
2. Heat 1tbsp oil in a wok or frying pan and stir-fry the pork for 4-5 minutes until cooked. Drain off any meat juices and reserve.
3. Add 1tbsp oil and the carrots. Stir-fry for 1 minute.
4. Add the remaining vegetables and stir-fry for another 2-3 minutes.
5. Stir in the piri piri sauce, reserved meat juices and 2tbsp water and heat through. Serve with the potato wedges.
