Pinto Tortilla Soup - Vince Seeley

Ingredients:
1 tablespoon butter
1/2 chopped onion (cup)
1 teaspoon minced garlic
3 water (cup)
1 salsa, i used black bean and corn thick (container) or 1 chunky salsa (container)
2 (14 ounce) pinto beans with liquid, i used a quart of pinto beans i had canned
1/2 chopped red pepper (cup)
1 bay leaf
2 tablespoons , instant veggie stock mix
1/4 teaspoon pepper
Directions:
1. Garnish.
2. Tortilla strips fried in oil till crispy.
3. Grated cheese.
4. Melt butter in pot, saute' onion and garlic until soft. Add next 7 ingredients. Bring to a boil then reduce heat and simmer 1 hours.
5. Remove bay leaf before serving.
6. Garnish with strips and cheese.
