Sounds funny..sorta tastes like pecan pie..but with more fiber!!
Ingredients:
1/2 cup pinto beans, cooked, drained, mashed
1/2 cup sweetened flaked coconut
1 cup granulated sugar
1/2 cup brown sugar, packed
2 eggs, beaten lightly
1/2 cup margarine (1/2 cup)
1 teaspoon vanilla extract
Directions:
1. Mix together and pour into an unbaked 9 pie shell.
2. Bake at 350* for 45 minutes.
