Just in time for Valentines Day, bake your sweetie this lovely cake and you'll be charished forever. I like to make this in heart shaped pans. Enjoy!
Ingredients:
2-1/2 cups cake flour, sifted
1-1/2 cups sugar
3-1/2 teaspoons baking powder
1 teaspoon salt
1/2 cup shortening
3/4 cup milk
1/4 cup maraschino cherry juice
1 teaspoon vanilla
1/2 teaspoon almond extract
4 egg whites
18 maraschino cherries, well-drained and finely
chopped
1/2 cup walnuts, chopped
pink valentine frosting
2 tablespoons shortening
2 tablespoons butter
1 teaspoon vanilla
1/2 teaspoon almond extract
1/2 teaspoon salt
4 cups sifted confectioners' sugar
9 tablespoons cream, scalded
red food coloring
Directions:
1. In a mixing bowl, sift together the flour, sugar,
2. baking powder and salt; cut in the shortening.
3. In another bowl, combine the milk and cherry juice;
4. add 3/4-cup milk mixture to flour mixture.
5. Add flavorings; beat for 200 strokes, scraping bowl frequently with spoon.
6. Add remaining milk mixture and egg whites; beat for 200
7. strokes or with an electric mixer.
8. Add the cherries and walnuts; mix well.
9. Pour into 2 greased and floured 9-inch cake pans.
10. Bake in preheated 375-degree oven for 20 to 25 minutes; cool. Remove from pans; frost with Pink Valentine Frosting.
11. Pink Valentine Frosting:
12. In a mixing bowl, combine the shortening, butter,
13. vanilla, almond extract and salt; blend well.
14. Beat in 1/2-cup sugar.
15. Add the cream alternately with the remaining sugar, beating well after each addition; add only enough cream to make it spreading consistency.
16. Add enough food coloring to tint to a delicate pink.
