Tomato juice adds a wonderful color and flavor to this rice plaf recipe which is esp nice with meat and poultry. The raisins and spices also add a wonderful flavor
Ingredients:
1 c fine noodles
4 oz olive oil or margarine
2 c long grain rice
2 c water
2 c tomato juice
1 c vegetable or chicken stock
1/2 ts allspice
1/4 c minced parsley
1 tb minced onion
1/2 c golden raisins ( opt )
salt & pepper to taste.
Directions:
1. Saute raw noodles until golden. You may wish to use
2. much less oil if desired. Add rice and saute with raw
3. noodles for 4 minutes, stirring constantly. Combine
4. and add remaining ingredients except parsley and
5. raisins and add to rice and noodles.Bring to a boil
6. and cover and simmer 20 minutes or tender and liquids
7. absorbed. Add parsley and raisins and fluff with a
8. fork. Season to taste.
