By combining a few recipes I came up with this little mini whoopie pie that refreshes as well as satisfies that sweet tooth
Ingredients:
cookie
1 cup butter (no substitues)at room temperature
1 cup granulated sugar
1 tsp. baking powder
1/2 tsp. baking soda
2 eggs
2/3 cup frozen pink lemonade concentrate, thawed
3 1/2 cups all-purpose flour
filling
1 cup butter at room temperature
2 cups confectioners sugar
1 jar (7 ounces) marshmallow fluff
1 tbsp. frozen pink lemonade concetrate, thawed
Directions:
1. Cookie:
2. 1. Beat butter in a mixing bowl then add granulated sugar, baking powder, and baking soda; beating until combined. Beat in eggs and lemonade concentrate. You may also add a few drops of red food color to add to the color of the cookie if you want.
3. 2. Stir in flour to mixture until completely incorporated.
4. 3. Drop by rounded teaspoon or small scoop 2 inches apart on an ungreased or parchment lined cookie sheet. Bake at 350 degrees F. for 10 minutes or until edges are slightly browned. Cool completely.
5. Filling:
6. 1. In the bowl of an electric mixer cream together butter and confectioners sugar until pale and fluffy, about 3 or 4 minutes. Add Fluff and lemonade and continue to mix until combined.
7. 2. scoop or pipe onto half the cookies and cover with the other half. Refrigerate to help set them up and serve.
