this recipe is from the Lakeshore Landing in Kelleys Island, Ohio.. the pineapple and the raisins sounded like they go very nicely with the zucchini...
Ingredients:
3 eggs
1 cup oil
2 cups sugar
2 t vanilla
2 cups shredded zucchini
1 can (8 1/4) crushed pineapple, drained
3 cups flour
2 t baking soda
1 t salt
1/4 t baking powder
1 1/2 t cinnamon
3/4 t nutmeg
1 cup currants or raisins
1 cup chopped walnuts
Directions:
1. Beat: eggs, oil, sugar, vanilla until thick
2. Stir in and blend well remaining ingredients. Pour into 2 greased 5x9 loaf pans.
3. Bake a 350 degrees for 1 hour.
