Pineapple Upside-down Sausage Bake

This is great for a Brunch or breakfast if made ahead. Unique flavors and really great.
Ingredients:
1 tbsp. brown sugar
1 can (8 oz.) pineapple chunks, drained
1 pkg. (8 oz.) frozen breakfast links, chopped
1 pkg. (8-1/2 oz.) corn muffin mix
1/4 cup cholesterol-free egg product (i used eggs)
Directions:
1. PREHEAT oven to 400°F. Spray 8-inch square baking dish with cooking spray; sprinkle evenly with brown sugar. Top with pineapple and chopped links.
2. PREPARE muffin mix as directed on package, substituting egg product for the egg. Pour evenly over ingredients in dish. Bake 25 to 30 min. or until golden brown.
3. RUN sharp knife around edge of dish to loosen casserole; invert onto serving platter.
4. NOTE: Remove links from freezer 5 to 10 min. before chopping. Or, thaw slightly in microwave before chopping.
