I made this first on a hot summer day. Even my father who does not like pineapple loved it.
Ingredients:
1 pineapple
1 tablespoon rose water
1 tablespoon sherry
2 tablespoon maple syrup
5 g vanilla
pinch of salt
1 egg white
Directions:
1. Peel the pineapple and remove the hard core and the eyes.
2. Puree the pineapple together with the rose water, sherry, maple syrup.
3. Beat the egg white with a pinch of salt and the vanilla until almost stiff.
4. Then stir in the pineapple mixture.
5. Put it into the deep freezer for 3 hours and stir it again every hour.
