Another delicious, moist pineapple sheet cake.
Ingredients:
1/2 cup oil
2 cups sugar
2 cups flour
1 tsp salt
1 tsp baking soda
2 eggs
20 oz can crushed pineapple with juice
topping
5 oz evaporated milk
1/2 cup margarine
1 cup sugar
1 tsp vanilla
1/2 cup coconut
1/2 cup chopped pecans
Directions:
1. Preheat oven to 350 degrees. Grease a large cookie sheet 11x17
2. Mix sugar, flour and baking soda
3. Add eggs, oil and pineapple
4. Pour onto sheet and bake for 25-30 minutes
5. Remove from oven and cool on rack
6. TOPPING
7. Combine milk, margarine and sugar in saucepan
8. Boil for 5 or 6 minutes stirring constantly
9. Remove from heat and stir in coconut, nuts and vanilla
10. Spread over cooled cake
