An Island blend in a mouthful of flavor! Serve it along side or over top for an over the top flavor explosion! After one taste...everyone wanted the clues.(use fresh , will not be equal if using canned pineapple! Read more !)
Ingredients:
i large fresh pineapple peeled, cored and chunked (or chopped as salsa)
1 tblsp. granulated sugar
1/4 tsp. salt
1 inch fresh gingerroot, peeled, grated (or finely chopped)
1/8 tsp. ground cayenne pepper
1 large palmful fresh cilantro, chopped
Directions:
1. Mix all together, cover & chill. Goes well as a salad/side to any dish, even better chopped smaller as a salsa over grilled/blackened fresh tuna with a rice/quinoa side & grill-roasted veggies!
