2 cups fresh pineapple, cut in 1 1/2 inch cubes
1/2 cup chopped red bell pepper
2 tablespoons chopped scallions
1 tablespoon finely chopped cilantro
2 teaspoons finely chopped jalapeno peppers, seeded (optional)
2 teaspoons finely chopped fresh ginger
Directions:
1. In a medium bowl combine all of the ingredients.
2. Cover and refrigerate at least 1 hour before serving.
