Pineapple Pie With Shortbread Pie Crust

Pineapple pie with shortbread pie crust makes an excellent dessert.
Ingredients:
398 ml crushed pineapple
2 tablespoons cornstarch
1/4 teaspoon salt
1/4 cup sugar
1 tablespoon butter
1 tablespoon lemon juice

1 cup flour
1/2 cup butter
3 teaspoons icing sugar
Directions:
1. Mix flour, butter and icing sugar and press into a 9 inch pie plate. Bake 20 minutes at 350°F.
2. Cook crushed pineapple, corn starch, salt and sugar until thick. Add butter and lemon juice. When cool pour into the cooked pie crust.
