Ingredients:
3/4 cup sugar
3 tbsp quick cooking tapioca
dash salt
4 cups fresh pineapple chunks
1 tsp grated lemon peel
1 tbsp lemon juice
1 9 inch pie shell with top crust
butter
Directions:
1. Mix sugar, tapioca and salt. Separately; mix pineapple, lemon peel and lemon juice. Combine two mixtures. Let stand
2. 15 minutes. Turn mixture into 9 inch pie shell. Dot with butter. Place top crust with slits. Bake at 425 degrees approximately 45 minutes.
