Pineapple Muffins

A delicately flavored fine textured muffin
Ingredients:
2 cups unbleached flour
1/2 cup sugar
1 tsp baking powder
1/2 tsp salt
1 egg
1/4 cup cooking oil
1 cup milk
1/2 cup crushed pineapple, well drained
Directions:
1. Measure flour, sugar, baking powder, and salt into large bowl. Stir. Make a well in center.
2. In small bowl, beat egg until frothy. Mix in cooking oil, milk, and pineapple. Pour into well. Stir just enough to moisten. Batter will be lumpy. Fill greased muffin cups 2/3 full, or muffin paper liners. Bake in 400 degrees F oven for 20 to 25 minutes. Wait 5 minutes for easier removal of muffins. Serve warm.
