Pineapple Macadamia Upside Down Muffins

Yummo is all I can say. Without a doubt one of my favorite cupcake recipes. These are elegant, impressive, light and very most.
Ingredients:
1 stick butter
1 cup dark brown sugar
1 cup fresh pineapple pieces cubed
1-1/4 cup coarsely chopped macadamia nuts
1-1/2 cup unbleached all purpose flour
1/2 cup firmly packed dark brown sugar
2 teaspoons baking powder
1-1/2 teaspoon grated orange peel
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup milk
1/2 cup butter melted and cooled slightly
2 eggs beaten
Directions:
1. Preheat oven to 375.
2. Grease 12 cup muffin tin with cooking spray.
3. Melt butter until bubbly.
4. Add brown sugar and cook until sugar and butter are well combined.
5. Divide mixture evenly between muffin cups.
6. Place four pineapple pieces in butter sugar mixture in the bottom of each muffin cup and sprinkle 1 tablespoon coarsely chopped macadamia nuts over the pineapple.
7. In large mixing bowl combine dry ingredients.
8. In separate bowl beat eggs together with melted butter and milk then mix wet and dry ingredients until just combined.
9. Divide batter evenly between muffin cups on top of pineapple and macadamia nuts.
10. Bake 25 minutes then invert onto warming rack removing muffin tin carefully.
11. If some of the pineapple pieces stay in the tin remove them and place them on top of the muffins again.
12. Allow muffins to cool for 5 minutes before serving.
13. Serve upside down.
