This was sort of a side-recipe in an Everyday Food email, designed to accompany broiled chili-lime chicken thighs. It sounds simple and tasty!
Ingredients:
1/2 pineapple
1 english cucumber
3 tablespoons lime juice
1/4 cup fresh cilantro, chopped
salt, to taste
pepper, to taste
Directions:
1. Chop pineapple (should be about 4 cups).
2. Slice cucumber into 1/4 inch thick slices (should be about 3 cups).
3. Mix all ingredients, seasoning with salt and pepper to taste.
