Ingredients:
1-1/2 cups coconut
1 cup flour
1 cup packed brown sugar
1/2 cup butter melted
1/8 teaspoon salt
filling
3/4 cups sugar
3 tablespoons cornstarch
1 can (8 oz) crushed pineapple undrained
1 tablespoon lemon juice
1 tablespoon butter
Directions:
1. In a bowl, combine the coconut, flour, brown sugar, butter and salt
2. Press1 1/2 cups into a greased 9 inch baking pan
3. Set remaining mixture aside
4. In a saucepan, combine the filling ingredients
5. Bring to a boil
6. Cook and stir for 2 minutesor until thick and bubbly
7. Cool
8. Spread over crust
9. Sprinkle with reserved coconut mixture
10. Bake at 350 for 25-30 minutesor until golden brown
11. Cool on wire rack
