Pineapple Cream Cheese Pie

This is refreshing and creamy and rich all at the same time. Yummmmmm....
Ingredients:
1/3 cup sugar
1 tbsp. cornstarch
9 oz. crushed pineapple
1/2 lb. cream cheese
1/2 cup sugar
1/2 tsp. salt
2 eggs
1/2 cup 2% milk
1/2 tsp. pure vanilla extract
1/2 cup chopped pecans
9″ unbaked pastry shell
Directions:
1. Blend sugar, cornstarch and pineapple.
2. Cook until thick and clear, then cool.
3. Blend cream cheese with 1/2 cup sugar and salt.
4. Add eggs, one at a time then blend in milk and vanilla extract.
5. Spread pineapple mixture in unbaked pie shell.
6. Pour cream cheese mixture on top.
7. Bake in a 400°F oven for 50 minutes.
8. Remove from oven, allow to cool, then chill for 2 hours before serving.
9. Serve with whipped cream or vanilla ice cream.
10. Serves 6-8 depending on the size of slice.
