Pineapple-Coconut Rice

Ingredients:
2 teaspoons olive oil
1 cup diced onion
2 teaspoons minced fresh or 1/2 teaspoon dried thyme
1/4 teaspoon pepper
3/4 cup uncooked basmati or long-grain rice
1 1/2 cups diced fresh pineapple
1 cup water
1/2 cup chopped green onions
1/2 cup pineapple juice
2 tablespoons flaked sweetened coconut
1/2 teaspoon salt
Directions:
1. Heat olive oil in a large saucepan over medium heat. Add diced onion, minced thyme, and pepper, and sauté 2 minutes. Add rice, and cook 1 minute. Stir in the pineapple and remaining ingredients, and bring to a boil. Cover, reduce heat, and simmer 20 minutes or until rice is done and liquid is absorbed.
