Pineapple Coconut Pancakes

An interesting twist on breakfast, and a good way to jump-start some fruit into the kids!
Ingredients:
1 cup bisquick
1/4 cup pineapple juice
1/4 cup milk
12 pineapple chunks
1 tsp cane sugar
shredded sweetened coconut
Directions:
1. Mash the pineapple chunks with a fork, and combine all ingredients except coconut.
2. Spoon about batter onto a hot greased pan.
3. Top with some shredded coconut and spread about 1 tbsp batter over coconut.
4. Flip and brown second side. Repeat for rest of batter.
