Pineapple Coconut Cake

A flavorful cake with a tropical taste
Ingredients:
2 c sugar
1/2 c oil
2 eggs
2 1/2 c flour
2 t soda
pinch salt
1 20oz can crushed pineapple with juice
1 t coconut extract
1 c chopped pecans
frosting
1 3oz pkg cream cheese
1/4 c butter, softened
1 t coconut extract
1 1/2 c powdered sugar or till right consistency
milk to consistency if needed
plain or toasted coconut for decoration
Directions:
1. Combine ingredients and beat 3 minutes. Pour into greased and floured 13x9 pan. Bake 350 degrees for 35 minutes or till tests done.
2. Frost and sprinkle with coconut.
