Pineapple Cheesecake Squares

Cut into bite sized squares,these creamy cheesecake bars are great finger food.
Ingredients:
crust
1/2 cup all purpose flour
3 tablespoons sugar
1/4 teaspoon salt
1/4 cup cold butter
filling
1 8oz can crushed pineapple
1 8oz package cream cheese-softened
3 tablespoons sugar
1 tablespoon sugar
1 egg-lightly beaten
1 cup milk
1 teaspoon vanilla extract
ground cinnamon
Directions:
1. In a bowl,combine flour,sugar,and salt. Cut in butter until mixture is crumbly.
2. Press into the bottom of an ungreased 8 square baking dish.
3. Bake at 325 degrees for 12 minutes. Cool on wire rack.

5. Drain pineapple,reserving juice. Set aside.
6. In a large mixing bowl,beat cream cheese,sugar,and flour until smooth.
7. Add egg. Beat on low until just combined.
8. Add pineapple juice. Gradually add milk and vanilla.
9. Sprinkle pineapple over crust.
10. Pour filling over pineapple. Sprinkle with cinnamon.
11. Bake at 325 degrees for 1 hour or until set.
12. Cool in wire rack for 1 hour then store in refrigerator until completely cold.
13. Cut into squares and serve.
