Pineapple-cheese Salad

Here's a cool creamy mold that you can use as a salad, side or dessert. From an old Sunset salad book.
Ingredients:
2 envelopes unflavored gelatin
1/2 cup cold water
16 ounce can crushed pineapple (do not drain)
3 tbsp lemon juice
1/2 cup sugar
1 cup heavy cream, whipped
1 cup cheddar cheese, shredded
1/2 cup walnuts, chopped
lettuce leaves, to line serving dish(es)
walnut halves (for garnish)
Directions:
1. Soften the gelatin in the cold water.
2. Heat the UNDRAINED crushed pineapple in a saucepan on medium low heat.
3. Stir in the softened gelatin until it dissolves.
4. Add the lemon juice and the sugar.
5. Put in refrigerator and chill until mixture is partially set. (Time will vary depending upon your refrigerator).
6. Whip the cream.
7. Fold whipped cream, cheese and chopped walnuts.
8. Pour into a 6-cup mold or 6 1-cup molds.
9. Chill until set.
10. Shortly before serving, place lettuce leaves on serving dish(es).
11. Unmold onto the lettuce.
12. Garnish with walnut halves.
