Pineapple Cheese Pie

Ingredients:
2/3 cup fine graham cracker crumbs
2 tablespoons butter, softened
1 (8 ounce) package cream cheese, softened
2 eggs
1/4 cup orange juice
1/4 cup sugar
1 tablespoon flour
1 tablespoon vanilla
1 teaspoon orange rind, grated
1 pinch salt (optional)
1 (12 ounce) can pineapple tidbits
1 teaspoon gelatin, unflavored
Directions:
1. Combine graham cracker crumbs and butter.
2. Mix well and press evenly into bottom of 9-inch pie pan.
3. Cream cream cheese. Add eggs and mix until smooth.
4. Add orange juice, sugar, flour, vanilla, orange rind and salt. Mix until smooth.
5. Pour into crumb crust. Bake at 3500 for 20 - 30 minutes or until filling is set. Chill.
6. To prepare topping drain pineapple juice into a saucepan.
7. Soften gelatin in juice and warm gently until it dissolves.
8. Chill until mixture begins to thicken.
9. Arrange pineapple tidbits over baked pie filling.
10. Pour gelatin mixture over all.
11. Chill 1 hour or until firm.
