Pineapple Cheese Mold

Oldie but goodie for this tasty side dishm which can serve as a salad or appetizers
Ingredients:
1 3 oz pkg lemon gelatin
1 cup boiling water
3/4 cup pineapple juice
1 tbs lemon juice
1 1/4 cups drained crushed pineapple
1 cup shredded sharp cheddar cheese
1 cup cream whipped
Directions:
1. Prep does not include chill time
2. Dissolve gelatin in the water and add juices.
3. Chill until slightly thickened.
4. Fold in crushed pineapple, cheese and cream.
5. Place in 1 1/2 qt mold and chill firm.
6. Unmold .
7. Nice over lettuce leaf cups.
8. Use as a refreshing salad course.
