Pineapple Carrot Raisin Muffins

This recipe makes a very moist, rich tasting muffin. Great for a brunch or as a dessert served with coffee.
Ingredients:
2 cups all purpose flour
1 cup of sugar
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/2 cup shredded carrots
1/2 cup raisins
1/2 cup chopped walnuts
8 ounces of crushed pineapple (undrained)
2 eggs
1/2 cup of butter or margarine, melted
1 teaspoon of vanilla
Directions:
1. In a large bowl, combine the flour, sugar, baking powder, cinnamon, and ginger.
2. Stir in carrots, raisins, and nuts.
3. In small bowl, combine undrained pineapple, eggs, butter, and vanilla.
4. Stir into dry ingredients until just blended.
5. Spoon into greased muffin cups.
6. Bake at 375 degrees for 20-25 minutes.
7. Remove from pan and cool on wire rack.
