Pineapple Carrot Bread

Delicious. Makes 2 loaves.
Ingredients:
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 1/2 teaspoons cinnamon
3 eggs, beaten
2 cups sugar
1 cup vegetable oil
1 cup grated carrot
1 (8 ounce) can crushed pineapple, undrained
2 teaspoons vanilla extract
1 cup chopped pecans
Directions:
1. Combine flour, soda, salt and cinnamon; set aside.
2. Combine eggs, sugar and oil in a medium mixing bowl; mix well.
3. Stir in carrots, pineapple and vanilla.
4. Add dry ingredients, mixing well.
5. Stir in pecans.
6. Pour batter into 2 greased 9x5x3 inch loafpans.
7. Bake at 325 for 1 hour and 10 minutes or until done.
