Moist cake for anywhere any time. Enjoy. You can put chuks of pineapple in as well or use as a great base for a pineapple upside down cake. Enjoy!!!
Ingredients:
2 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon nutmeg
3 teaspoons baking powder
1/4 cup water
3/4 cup pineapple juice
1/2 cup shortening
1 tablespoon butter
3 eggs
1 tablespoon vanilla
Directions:
1. Stir flour, baking powder, nutmeg and salt together.
2. Cream shortening and butter, gradually add sugar, beating between additions.
3. Add eggs and beat until fluffy.
4. Mix water and pineapple juice.
5. Add dry ingredients, alternately with water and pine juice mix, blending well after each addition. Stir in vanilla.
6. Pour into two greased and floured or lined 8 layer cake pans. Bake in a moderate oven (350F) 25 to 30 minutes or until done.
7. Frost as desired.
