A refreshing and filling vegetarian tropical salad.
Ingredients:
1/3 medium avocado
1/3 cup fresh pineapple chunk
3/4 cup bulgar wheat, cooked and (chilled)
1/4 cup red bell pepper, chopped
2 tablespoons celery, chopped
1 scallion, thinly sliced
1 teaspoon olive oil
1 tablespoon lemon juice
Directions:
1. Peel and cube avocado and stir in pineapple. Pineapple will prevent avocado discoloring. Combine ingredients and toss.
