PINEAPPLE BREAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Sorrell Estate in Greenville, Texas in 1992.
Ingredients:
1/2 cup butter softened
1/2 cup granulated sugar
2 eggs
2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
8 ounce can crushed pineapple with juice
1 teaspoon vanilla extract
Directions:
1. Cream butter then gradually add sugar beating well.
2. Add eggs one at a time beating well after each addition.
3. Combine flour, baking powder and salt then add to creamed mixture alternately with pineapple.
4. Mix well then stir in vanilla extract and spoon batter into greased and floured loaf pan.
5. Bake at 350 for 55 minutes then cool in pan 10 minutes and remove and cool completely on rack.
