Easy to make. Stays moist for several days. Always a hit when I take it to work. Excellent breakfast breaed
Ingredients:
3 cups flour
1/3 teaspoon vanilla
2 cups crushed pineapple
1 cup oil
3 eggs, beaten
1/2 teaspoon cinnamon
2 cups sugar
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup walnuts or 1 cup pecans
Directions:
1. Beat eggs, sugar and oil.
2. Add sifted flour, baking soda, baking powder and cinnamon.
3. Mix in pineapple and walnuts or pecans.
4. Pour into 2 loaf pans.
5. Bake at 325 degrees for 50-60 minutes.
