AWESOME side dish which is easy and quick! This recipe was given to my mother from friends in her Homemaker's Club many years ago. The pineapple blends and adds a wonderful flavor to the beets. The beets and pineapple make a pretty vegetable dish.
Ingredients:
2 tablespoons brown sugar
1 tablespoon cornstarch
1/4 teaspoon salt
8 ounces pineapple tidbits
1 teaspoon butter
2 tablespoons lemon juice
1 (16 ounce) can sliced beets
Directions:
1. Drain sliced beets and cut into half pieces Set aside.
2. In a medium saucepan combine sugar, cornstarch and salt. Stir in pineapple and juice. Cook on low heat, stirring constantly until mixture thickens and bubbles.
3. Add butter, lemon juice and beets. Cook an additional 5 minutes until heated through.
4. Serve and enjoy!
