This is a versatile recipe that can be made in the oven or on the barbecue. Easy and it has gotten several excellent reviews from my friends. Recipe came from a southern cookbook.
Ingredients:
4 lbs spareribs
1/4 cup vinegar
1/2 cup water
2 tablespoons brown sugar
1 tablespoon prepared mustard
1 1/2 teaspoons salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper
1 onion, chopped
1 lemon, juice of
1/2 cup ketchup
2 tablespoons worcestershire sauce
2 tablespoons butter (optional)
1 1/2 teaspoons liquid smoke (optional)
1/2 cup crushed pineapple
splash beer (drink the rest)
Directions:
1. Mix vinegar, water, brown sugar, salt, pepper, cayenne, lemon juice, onion and ketchup and bring to a boil. Lower heat and simmer for 20 minutes.
2. Add Worcestershire sauce and the other ingredients.
3. Place spareribs in a roasting pan cover with foil and bake at 425 degrees for 45 minutes.
4. Pour off excess grease and pour on half of the barbecue sauce.
5. Reduce the heat to 350 degrees.
6. Baste with the other sauce for approximately 1 hours longer until the ribs are nicely browned and fork tender.
7. If you wish to grill marinate for at least 1 hour in the sauce and cook over slow coals until fork tender.Remember to baste.
8. I serve this with some fresh grilled pineapple when in season.
