Here's a great muffin recipe for those church breakfast get togethers!
Ingredients:
1 tablespoon butter or margarine, softened
1/2 cup granulated white sugar
1 egg
2/3 cup grape-nuts cereal(or other cereal)
1 (8oz) can crushed pineapple (1 cup) undrained
1 cup mashed very ripe bananas (2 to 3)
2 cups biscuit mix ( bisquick )
1 teaspoon cinnamon
1/2 to 1 cup chocolate chips(optional)
Directions:
1. Preheat oven to 425 degrees F
2. Line muffin tins with paper liners.
3. Cream margarine with sugar.
4. Add egg and beat well.
5. IF MIXTURE SEEMS TOO DRY, OR YOU HAVE EXTRA BANANAS, ADD ANOTHER EGG.
6. Add cereal, pineapple with juice, bananas, biscuit mix & cinnamon.
7. Stir until just blended.
8. Mixture will be lumpy.
9. Stir in chocolate chips(if desired)
10. Fill muffin cups 2/3 full of batter;
11. Bake 15 - 20 minutes, or until tops are light brown & toothpick comes out clean.
12. CAREFUL! BOTTOMS WILL BURN IF YOU LET TOP GET TOO BROWN!!
13. Make 18 - 20 regular or 12 large muffins
