Pineapple Au Gratin

It makes a nice side dish to go with pork or ham. We serve it at Thanksgiving sometimes.
Ingredients:
1 13.5 oz. can pineapple chunks (reserve juice)
2 t. flour
1 cup sugar
2 eggs
pinch of salt
1 8oz. pkg. cream cheese
2 cups miniature marshmallows
cheddar cheese, shredded
Directions:
1. Drain pineapple chunks and reserve 3/4 cup juice.
2. In a double boiler, combine the juice, flour, sugar, eggs and salt.
3. Cook over very low heat until thick.
4. In a casserole dish, layer cream cheese, marshmallows and pineapple chunks twice
5. Pour sauce over top.
6. Finish with a generous layer of shredded cheddar cheese.
7. Bake at 350 for 25 minutes or until bubbly hot.
