Pine Nut-Crusted Tilapia

Ingredients:

  • 1/4 cup flour
  • 1/4 tsp dill weed
  • 1/8 tsp garlic salt
  • 1 egg
  • 3 tbsp lemon juice
  • 1 tsp honey
  • 4 (4 -6 oz) tilapia fillets (4-6oz ea)
  • 2 tbsp butter

Directions:

  1. In a shallow bowl, combine the pine nuts, flour, dill, lemon-pepper and garlic salt.
  2. In another shallow bowl, combine the egg, lemon juice and honey.
  3. Dip the fish in egg-mixture, then coat with the nut mixture.
  4. In a nonstick skillet, cook fish in butter over medium heat for 4-6 minutes on each side or until the fish flakes easily with a fork.
  5. Sprinkle with dill.
