Ingredients:
2 teaspoons olive oil
1 1/2 cups chopped onion
4 garlic cloves, minced
5 cups hot cooked rice
1/3 cup chopped fresh basil
1/3 cup pine nuts, toasted
1/2 teaspoon salt
1/4 teaspoon pepper
basil sprig (optional)
Directions:
1. Heat olive oil in a large nonstick skillet over medium heat. Add onion and garlic, and sauté 3 minutes or until tender. Combine onion mixture, rice, and remaining ingredients in a bowl; toss well. Garnish with a basil sprig, if desired.
