  1. DRAIN PINEAPPLE AND RESERVE THE JUICE.
  2. BRING JUICE AND 1/2 CUP OF WATER TO A BOIL, STIR IN RICE AND SIMMER 2 MINUTES,
  3. REMOVE FROM HEAT, COVER AND LET STEAM 5 MINUTES.
  4. PREPARE PUDDING, IN A MEDIUM BOWL, ACCORDING TO PACKAGE INSTRUCTIONS USING THE 2 CUPS OF MILK
  5. ADD PINEAPPLE, COCONUT, MARSHMELLOWS, NUTS AND LEMON JUICE, BANANA AND HOT RICE MIXTURE. STIR TO MIX
  6. CHILL 30 MINUTES OR MORE
