Found this gem in a store flyer last summer and it is one of my favorite dips. Great with fruit - either as a dip or as a dressing for a fruit salad. Can be eaten right away, but I like to chill for about an hour before serving. Read more . Fat free/low fat ingredients all work well in this one.
Ingredients:
1/2 cup (about 4 oz.) plain yogurt
4 oz. cream cheese, softened
1 (4-serving size) pkg. instant vanilla pudding mix
1/4 cup crushed pineapple, drained well (i go ahead and use a whole small can, even though it may be more than 1/4 cup)
1/2 tsp. coconut extract
1/2 tsp. imitation rum flavoring/extract
1/2 cup frozen whipped topping, thawed
Directions:
1. In a medium bowl, blend together yogurt, cream cheese and pudding mix until smooth.
2. Stir in pineapple and extracts.
3. Fold in whipped topping.
4. Cover and, if desired, refrigerate for one hour or until ready to serve.
