It's almost time for fresh fruit season around here again - a time of year I LOVE...this fruit dip detracts from the healthiness of the fruit, but hey, it tastes good! I especially enjoy this with strawberries, bananas and pineapple chunks. Read more . For a party, make little bamboo skewers of grapes, strawberries, banana slices (don't forget the Fruit Fresh to keep them from turning brown!), fresh pineapple chunks - pile the skeweres around the dip and let the dippin' begin!
Ingredients:
1 (8 ounce) can crushed pineapple and all of the juice
1 small box instant coconut cream pudding mix
3/4 cup milk
1/2 cup sour cream
1/2 teaspoon coconut extract (this can be omitted if you don't have it - no substitute needed)
Directions:
1. Put all ingredients into a blender or food processor; blend on High for 30 seconds, or process until smooth.
2. Pour dip into a bowl, cover well and chill overnight.
3. Serve with a platter of fruit chunks and some assorted cheese cubes.
