Ingredients:

  • 1 cup pina colada nonalcoholic drink mix, from the bottle
  • 1/4 cup water
  • 3 1/2 tbsp powdered sugar
  • 1 1/2 tsp cornstarch
  • 1 tbsp cold water

Directions:

  1. Mix together Piña Colada mix, water, crushed pineapple, coconut, and powdered sugar in a saucepan.
  2. Heat on medium low temperature until sauce begins to simmer, stirring frequently.
  3. Let mixture simmer slowly 10 to 12 minutes.
  4. Mix cornstarch and water together, add to sauce, and blend well.
  5. Let the mixture simmer for 3 to 5 minutes longer while stirring during and after adding cornstarch.
  6. Remove from heat and bring to room temperature.
  7. Sauce is served at room temperature or chilled with coconut shrimp (but it tastes great on other stuff, too).
