A nice light flavored cake, great for the summer barbecues.
Ingredients:
crust
2 cups 'nilla wafers, crushed
1/4 cup sugar
4 tbsp butter, softened
filling
2 pounds philly cream cheese
1 1/4 cup sugar
4 tbsp flour
5 large eggs
1 ounce coconut extract
1 ounce pineapple extract
1/4 cup dark rum
1.2 cup heavy cream
Directions:
1. Preheat oven to 500^.
2. Crust: Blend all ingredients until combined.
3. Butter the sides and bottom of 10 spring-pan.
4. Press crumb mixture onto sides and bottom of pan.
5. Set in fridge.
6. Filling: Blend cream cheese, sugar, and flour until smooth.
7. Add eggs one at a time.
8. Add extracts, rum, and cream, mixing thoroughly.
9. Pour into prepared pan.
10. Bake at 500^ for 15 minutes.
11. Leaving pan in oven, reduce temp to 250^ and continue baking for 1 hour.
12. Let cool and refridgerate before serving
