Pimentos Com Anchovas - Peppers With Anchovies

On a trip into Cantabria (northern Spain), I ate this as a starter. Loved it so much I re-created it when I returned home. Hope you like it too - but forget the garlic-breath!
Ingredients:
1 can roasted red peppers
1 can anchovies in brine
chopped garlic
the best olive oil you can find
crusty bread
Directions:
1. Drain the peppers.
2. Cut lengthwise to form 2 halves.
3. Spread artistically on a serving dish.
4. Drain the anchovies and put 1 fillet on top ov each half pepper.
5. Chop however much garlic you want.
6. Scatter it over the peppers/anchovies.
7. Drizzle over with plenty of olive oil.
8. Let it rest for at least half-hour, for the flavors to merge.
9. Serve wit crusty bread to mop up the olive oil.
