Pierogi Pasta Shells

Originally from Kim Wallace in Dover, Ohio.
Ingredients:
51 uncooked jumbo pasta shells
32 ounces refrigerated mashed potatoes
2 tablespoons instant minced onion
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 cup green onion, chopped
4 cups cheddar cheese, shredded and divided
Directions:
1. Cook Pasta Shells according to package directions.
2. Drain and rinse in cold water.
3. Place mashed potatoes in a large microwave-safe bowl.
4. Cover and microwave on high for 4 minutes, Stirring once.
5. Add the minced onion, onion pwoder and garlic powder.
6. Stir in 2 cups of of cheese until blended.
7. Stuff into shells.
8. Place in two greased 13 x 9 inch baking dish.
9. Sprinkle with green onions and remaining cheese.
10. Cover and bake at 350 degrees for 20 minutes.
11. Uncover and bake 10 munutes longer or until heated through.
