This is a great quick fix for a picnic or party. It is always a favorite at our family picnics and partys.
Ingredients:
2 cans of bean dip or refried beans - i use low-fat refried beans for a healthlier option.
1 8 oz carton of sour cream
1 tbsp of mayonaise
1 pkg of taco seasoning
1 medium or small onion or several green onions
1 tomato
1 can of diced or sliced black olives
1 pkg of longhorn, pepper jack, or montoray jack cheese - you can use pre-grated cheese but i think grating my own is a cheaper and fresher alternative.
1 carton of guacomoli dip - you can make your own if you'd like. this is an option i often leave out because our family doesn't care for it.
Directions:
1. Spread the bean dip or refried beans into the bottom of a casserole dish. I use a square Corningware dish.
2. At this point, if you wish you can spread the guacomoli dip over the beans.
3. In a small bowl mix sour cream, mayo, and taco seasoning together.
4. Spread the sour cream mixture over the beans and or guacomoli dip.
5. Dice the onion and sprinkle over the cream mixture.
6. If you didn't opt for pre-grated cheese, grate your cheese and sprinkle over onions and cream mixture. Be generous with the cheese. People love cheese.
7. Dice the tomato and sprinkle over cheese.
8. Open and drain olives. Sprinkle them over the cheese.
9. Cover with plastic wrap or if you have lid for your casserole dish use this.
10. You can serve this immediately but it tastes better if you make this a night ahead and chill in refrigerator.
11. Serve at picnic or party with a generous amount of tortilla chips. We have served plain tortilla chips and also Doritoes with it.
12. Enjoy this tasty treat with your family and friends!
