Pickled Shrimp

Fabulous for a dinner party! May be made in advance by a day.
Ingredients:
6 cups water
2 lbs shrimp
1 onion, sliced into rings
2 1/4 ounces capers, drained
3 bay leaves
1 cup vegetable oil
3/4 cup water
1/4 cup lemon juice
2 1/2 teaspoons celery seeds
1 1/2 teaspoons salt
1 teaspoon white sugar
1/4 teaspoon tabasco sauce
Directions:
1. Boil Shrimp.
2. Drain well and rinse in cold water, and peel and de-vein.
3. Place 1/2 shrimp in large bowl. Cover with 1/2 the onion rings, and 1/2 the capers.
4. Repeat layering of shrimp, onion, and capers.
5. Top with bay leaves.
6. Combine all other ingredients, using a whisk to incorporate.
7. Pour marinade over shrimp. Cover tightly, and chill for at least 8 hours.
8. To serve, drain well and remove bay leaves.
